Jerk Nuggets and Rice and Peas

Another lunch idea I took to work…


I used brown rice and kidney beans and cooked them in coconut milk with herbs and spices (tumeric, garlic powder, onion, salt, a bit of sugar).  For the nuggets, I dipped the Gardein crispy tenders in Grace’s BBQ Jerk Sauce and then baked them.  Yummers!

Shepherd’s Pie

For lunch at work I made myself some Shepherd’s Pie loosely following this recipe and the Give Them Something Better cookbook.

For the mashed potatoes I left the skin on for nutritional value.  For the filling, I made a brown gravy that I mixed into the Yves veggie ground beef.  Was it good?  Of course!
